why?

because of fried...

fried egg is: -- kai dao
fried potatoes: -- man tot
fried rice: -- kao pat

the verb to fry is "pat"

except for eggs, where jiau is used.

WTF?

and how would "fried noodles" be?


Does anyone know the subtleties that are probably involved?

fried rice = nasi goreng
fried chicken = ayam goreng
fried prawn = udang goreng
