I honestly think its not going to be easy for you finding work here. Since I assume that you're likely preop? It doesn't mean as well if you're LB and you work in a LB cruising place you'll be likely to get the job as a waitress. I mean taboo for instance, which is a local gay club hires only "straight" staff and not gay ones. Maybe if you pass off as a butch or dyke it may help since I seem to see alot of them working in nightspots, whether gay or straight (no offence to the lesbians).
You can probably give it a go but you'll likely find yourself limited to OT if you're looking for a place with LBs. I wouldn't want to work there since its super crowded at times and definitely very tiring, plus it can get rowdy at times - I've worked at Ipanema long time back as a server and I don't think it was a nice experience.
If you're really really keen though you should come down and check out the bars yourself since I'm quite sure turnover for F&B is pretty high and you'd find out immediately if you'd get the job.
All in all, why don't you try a queer friendly organization like body shop or MAC?
